Restaurante Vendome (Alemania)
Joachim Wissler was born in 1963 and grew up on a farm in the Swabian Alb. The passionate cook completed his training in the “Traube Tonbach” (Baiersbronn). After taking on various positions in Baden, he received his first Michelin star as Head Chef at Schloss Reinhartshausen (Erbach / Rheingau) in 1995.
In the year 2000 Wissler moved to the restaurant Vendôme at the Grandhotel Schloss Bensberg, where he already received his first Michelin star after one year, the second in 2002 and the third star in 2004. In 2001 “Der Feinschmecker” magazine voted the Vendôme “Restaurant of the Year”. In 2003 the Gault Millau and in 2004 “Der Feinschmecker” voted Joachim Wissler “Cook of the Year”. In 2010 he was the first German chef to ever receive the Spanish “Lo Mejor de la Gastronomia” award for international cooks, in Alicante. In the German survey by the gourmet portal “Restaurant-Ranglisten” in the year 2012, the best 100 cooks in Germany voted Joachim Wissler “Cook of Cooks”.
In 2010 Joachim Wissler published his new cookbook “JW”. The book includes around 150 dishes – in fact, 150 precisely harmonized little culinary wonders. As every one of these dishes consists of several components, the sum of recipes actually amounts to roughly 500. Users of the cookbook can then find these on a dynamic website with a personal access code. The dishes are arranged into five large menu groups. Four of them are based on the four seasons. One of them relates to the “new classics” of the Vendôme kitchen. And all those who are interested can gain a deep insight into the development processes of each dish. “JW” received the red dot communication design award 2010.
Joachim Wissler is part of the culinary elite of Germany and in 2014 was ranked 12th in the “World’s 50 Best Restaurants” list. The restaurant Vendôme at the Grandhotel Schloss Bensberg not only received three Michelin stars again for 2014, but also 19.5 Gault Millau points as well as 5 Feinschmecker “F”.
