Normand Laprise

Restaurante Toque (Canadá)

Normand Laprise was born in 1961 in Kamouraska, a small village on the South shore of the St. Lawrence River in Québec.

In 1978 Laprise enrolled at the Charlesbourg Hotel School in Québec City followed by a first job at Café de la Paix. But it is under the guidance of Chef Jacques Le Pluart at the Marie-Clarisse Restaurant in Québec City that his inspiration and passion for cuisine du marché are confirmed. From 1984 to 1988 he developed his skills at the Lutetia Restaurant at Hôtel de la Montagne in Montreal.

His first apprenticeship began at the Relais & Château La Cloche d’Or in Dijon. He returned to Canada in 1989 to work in the restaurant Citrus and was quickly noticed for this creativity.

In 1993 he opened Restaurant TOQUÉ! with his associate Christine Lamarche in the heart of “Le Plateau” in Montreal which then moved to the International quarter in Old Montreal in 2004.

In 2006 Normand Laprise was awarded the title Grand Chef Relais & Châteaux. Toqué! has been a member of the prestigious association since then. Due to his success at Toque! In June 2010 Normand opens a second restaurant with his associate, Christine Lamarche, Brasserie T!

In 2012 he launched his first culinary book, TOQUÉ! Creators of Québec Gastronomy – a manifesto on culinary products and artisans with 190 recipes and photographs for which he received a James Beard Foundation Award in 2013. In 2014 he was presented with the Gourmand World Cookbook Award – Best Canadian Cookbook for French and English versions of Toqué! Creators of a new Québec Gastronomy and was finalist in the worldwide category.
